I dont eat 2400 YET. but i will show you what my current goal of 1800-2000 calories looks like:

Breakfast:

  • ICED 16oz sugar-free White Chocolate Soy Latte
  • Cinnamon Raisin English Muffin with 1 tablespoon Peanut butter
  • 1 cup of fruit (blueberries, raspberries..whatever i have at the moment)

Total= 400 calories

Mid Morning Snack:

  • CLiff Bar
  • Iced 160oz Sugar-free White Chocolate soy latte

Total= 350 calories

Lunch:

  • 2 pieces whole wheat bread with 1 tablespoon of peanut butter served with 1/2 apple cut into thin slices.

Total= 280 calories

Mid Day Snack:

  • Protein Shake- GNC soy protein, 1/2 cup frozen cherries, soy milk

Total= 330 calories

Dinner:

  • 3 cups lettuce
  • 1/2 cup kidney beans
  • 1/2 cup corn
  • Asian Dressing
  • 2 pieces whole wheat toast

Total= 420 calories

Night time snack:

  • Fruit smoothie: 1/2 banana, 1 cup frozen blackberries, 1 cup soy milk

Total= 230 calories

Total for WHOLE day= 2,110.

Protein for day like this would be around 70 Grams. it is possible to get protein being vegan 8)

I typical do not have a cliff bar and protein shake in the same day. but to show that it is POSSIBLE to get that high in calories i made it this way.

its not hard to eat ENOUGH and healhty, you just have to eat the right things!
